Prime Rib with Wine

The Story:

A sneak peak at my X-mas card....and yes, I sent it to my grandma, too!

The Pairing:

In my family, turkey is reserved for Thanksgiving and prime rib is served on Christmas day.  Since Christmas is my favorite holiday and only comes once a year, I pull out something special for everyone to enjoy.  This year, I'll be pouring a bottle of the 2007 JAQK Cellars "High Roller" Cabernet Sauvignon from Napa Valley.

Cabernet Sauvignon is perfect with prime rib.  Most people don't realize that different cuts of meat, along with different cooking methods and seasonings call for different wines and since prime rib is roasted, rich and fatty, it begs for an equally heavy duty wine.  This pairing works because the meat's fats and proteins coat the mouth, helping to soften the impression of the wine's tannin.  The tannin then acts as a palate cleanser, once it strips away the protein.  In addition, the wine's aroma's of black fruit, red licorice and sage help to add flavor to the meat and the toasty oak from use of french barrels is integrated nicely, helping to highlight the slight char on the outside of the meat.  If you want to impress your guests, this is the way to do it!
